Cheers! Huzzah! Mazel Tov! I’ll drink to that!
Americans have lots of expressions that accompany raising a glass and toasting something or other, be it a congratulatory tinking of crystal flutes to the bride and groom or clanking long-necked beer bottles to the father-to-be. Some have even been known to raise a glass in honor of a much-needed divorce being finalized or the good riddance of a bad boss. Either way, celebrating with alcohol is a very common and popular practice. One I highly condone, but please use moderation when imbibing. And NEVER drive afterward.
I enjoy a nice glass of wine, a chilled microbrew or a fancy cocktail in the evening, when I’m winding down from a long day. I especially like to engage in this activity in the late afternoon after the rush of finishing that last load of laundry and greeting guests occurs but before I begin the process of figuring out “what’s for dinner?”
I especially enjoy my evening beverage when someone else fixes it for me and delivers it to my rocking chair on the porch, which has been known to happen on occasion, but usually not without a prompt from me first. In any event, I do have my own personal bartender who mixes up fabulous concoctions for my enjoyment.
That’s one of the things I really enjoy about traveling; sampling new libations. I like to peruse cocktail menus, reading each of the drink descriptions before making my selection. Sometimes I am disappointed with my choice and am then stuck with an over-priced beverage that I am not going to enjoy, but most times, I find myself wondering if I can recreate that beverage in my own kitchen/bar.
I’m going to share with you – because I’m a giver – a delicious recipe I discovered recently on Facebook, of all places. It’s a bit tart, a bit zingy, and a bit bubbly, all mixed into one. Give it a try:
Raspberry Rum Mule
2 oz rum (light rum, not spiced)
½ lime – juiced
1 tsp agave nectar (honey would probably work just fine)
5 raspberries
½ bottle ginger beer
½ cup ice
Fill cocktail shaker with rum, lime juice, agave nectar, raspberries, and ice
Shake mixture until ingredients are “married” together
Add mixture to a serving glass (I used my copper “mule” mug) and top with ginger beer
Garnish with extra raspberries and a sprig of fresh rosemary (optional)
Enjoy!

You make that drink look and sound delicious. I’m pretty much just a scotch and soda guy but when I travel (especially cruises) I’m partial to brandy alexanders, especially if they’re made with ice cream instead of cream.
As for toasts, my favorite is “Here’s to you, and here’s to me, may we never disagree, but if we do, to hell with you, here’s to me!” (You knew that was coming).

I do like a frosty beverage in the evening after dinner, when I know I’m not going to get any more work done in the day. I developed a fondness for mojitos in Kauai, and with a sprig of fresh mint from my garden, it’s no problem whipping one up at home. Your recipe sounds great…except for the ginger beer. I’ve never developed a taste for beer or ginger. I wonder if there’s a substitute because the rest of it sounds tasty!

Maybe try club soda or 7-Up. The ginger gives a peppery sort of zing and the bubbles give it that effervescent feel and taste. It’s quite refreshing.
And, I’m with you about winding down at the end of the day. Although . . . I have been known to start sipping wine or gin and tonics in the early afternoon, if I don’t have any quests checking in. Depends on the day.
